Easy White Turkey Chili: A Simple, High-Protein Dinner

Two of the most common misconceptions that I hear when discussing healthy eating with people are that (1) healthy eating is boring and (2) making healthy meals that taste good necessitates having Gordon Ramsay-level skills in the kitchen.

Those misconceptions arise because they can certainly be true. For example, even I’ll admit that my typical breakfast during the week—which includes a protein shake, a couple bananas, and a handful of mixed nuts—isn’t particularly exciting. And on the skills front, making a perfect French omelet with a vegetable filling does require more than a bit of practice.

But making meals that are both delicious and simple is also possible.

If you know your way around the kitchen, that statement comes as no surprise. And I’m sure that you already have plenty of strategies and recipes at your disposal. (But I’ll still add one more…)

If you don’t fancy yourself as much of a chef, below is one of my favorite winter recipes that checks all the boxes and then some:

  • It’s tasty and simple to make. (Simple = few steps)
  • It includes everything you should look for in a well-rounded meal (protein, carbs, fat, & veggies).
  • It’s quick, typically makes enough to provide leftovers, and those leftovers re-heat well and taste just as good the following day. (Quick = not much time… roughly 25 minutes in this case.)
  • It doesn’t contain dairy. (Dairy is really only an issue if you have a lactose intolerance. I just make this point because recipes that have white in their name usually contain some form of dairy. This recipe has a rather unique approach, however.)

In any case, you’ll also notice that the ingredient list is written a little differently than what you might be used to seeing. It’s a modified version of a method used to simplify the cooking process. I was first exposed to the idea when reading Tim Ferriss’ book The 4-Hour Chef… which is actually a great book if you currently aren’t very comfortable in the kitchen and want to level-up your cooking skills.
