Chicken Curry: An Easy Chicken Recipe That’s Anything But Boring

Last week while discussing self-concordant goals, I said that one of mine over the past couple years has related to climbing mountains with my brother. I also mentioned that you were probably reading the tip while I was having dinner after summit number one of four on Mt. Whitney.

Today I have three very quick related thoughts:

First, we finished summit number four today, and I’m heading back home tomorrow. So this tip is going to be brief because it’s been a long—but good—nine days! I’ll offer some pics and insights in next week’s tip…

And finally, I ate quite a bit of reconstituted dehydrated meals while on the mountain. My favorite brand is Peak Refuel (more protein, less salt, better tasting). One of their meals is a chicken coconut curry. It’s quite tasty. But not nearly as tasty as if you made something similar at home with fresh ingredients.

So on that note, here’s the chicken curry recipe that is a relatively common staple meal when I’m home. If you’re tired of boring old chicken recipes, this one should add some excitement to your next poultry-based meal.

As I’ve said with previous recipes, the ingredient list is written a little differently than what you might be used to seeing. It’s a modified version of a method used to simplify the cooking process. I was first exposed to the idea when reading Tim Ferriss’ book The 4-Hour Chef, which is actually a great book if you currently aren’t very comfortable in the kitchen and want to level-up your cooking skills.
